Korean Green Onion Pancake (Pajeon)

Ingredients:

 

For the Pancake Batter: 

 

  • 1 cup of korean pancake mix or all-purpose flour
  • 1 cup of cold water
  • 1 large egg
  • 1 tablespoon of soy sauce
  • 1 tablespoon of sesame oil
  • 1/2 teaspoon of salt

 

Optional Toppings:

 

  • 3-4 green onions (scallions), thinly sliced
  • 1/4 cup of chopped kimchi
  • 1/4 cup of small shrimp or seafood
  • 1/4 cup of sliced mushrooms

 

Optional Dipping Sauce:

 

  • 2 tablespoons of soy sauce
  • 1 tablespoon of rice vinegar
  • 1 teaspoon of sesame oil
  • A pinch of toasted sesame seeds

 

 

Instructions:

 

  1. Mix flour, water, egg, soy sauce, sesame oil, and salt in a bowl until smooth. Wait for 10-15 mins to mix flavors.
  2. Get the filling ingredients ready by cutting green onions into strips. Cut kimchi into manageable pieces and wash/prepare chosen ingredients.
  3. Mix batter and add onions, kimchi, shrimp/seafood, mushrooms (optional). Mix ingredients well for even distribution of flavors.
  4. Heat a non-stick frying pan on medium heat and cover with an ample amount of vegetable oil, spreading evenly.
  5. Pour batter into hot oil, spread evenly for pancake. Cook pancake for 3-4 mins on each side until golden brown. Flip with spatula once bottom is cooked.
  6. Repeat with remaining batter and adjust pancake size to preference. Add oil as needed.
  7. Place cooked pancakes on a paper towel-lined plate. Cut into small pieces for easy eating.

 

 

Tips:

 

  • Omit the shrimp and seafood if you prefer a meatless option, and enjoy the pancake with the other optional toppings.
  • Pajeon pairs wonderfully with a optional dipping sauce called "Choganjang".
