Ingredients:
For the Sweet Rice:
- 2 cups of sweet rice (also known as glutinous rice)
- 2 1/2 cups of water
For the Fruit & Nut Mixture:
- 1/2 cup of dried jujubes, chopped
- 1/2 cup of dried apricots, diced
- 1/2 cup of raisins
- 1/4 cup of dried cranberries
- 1/4 cup of dried cherries
- 1/4 cup of pine nuts
- 1/4 cup of almonds, sliced
For the Sweet Sauce:
- 1/2 cup of brown sugar
- 1/2 cup of honey
- 1/4 cup of soy sauce
- 1/4 cup of water
- 2 tablespoons of sesame oil
- 1 tablespoon of sesame seeds, toasted
Instructions:
- Wash and soak sweet rice for 2 hours before draining.
- Boil soaked sweet rice in pot with 2 1/2 cups water. Boil, reduce, cover and simmer for 15 mins.
- Mix fruit and nut mixture in a bowl. Mix for a balanced mix of texture and taste.
- As rice cooks, prep fruit and nuts. Combine jujubes, apricots, raisins, cranberries, cherries, pine nuts, and almonds in bowl. Blend for a tasty and satisfying mouthfeel.
- After 15 mins, add fruit and nut mix to sweet rice and remove from heat. Mix well, evenly distributing fruits and nuts in rice.
- Drizzle sauce over rice and fold gently to coat thoroughly.
- Simmer for 5 minutes, stirring occasionally to blend flavors.
- Transfer cooked Yakbap to a dish and serve warm or chilled. Serve as dessert or tea time treat.

- For a sweeter Yakbap, add more brown sugar or honey to the sauce.
