Ingredients:
For the Broth:
- 6 cups of beef broth
- 2 tablespoons of soy sauce
- 2 tablespoons of rice vinegar
- 1 tablespoon of sugar
- 1 teaspoon of minced garlic
- 1 teaspoon of grated ginger
- 1 teaspoon of sesame oil
For the Noodles:
- 14 ounces buckwheat or arrowroot noodles
- Ice water (for soaking and rinsing the noodles)
- 2 tablespoons of sesame oil (for coating the noodles)
For the Toppings:
- 1 cup of beef, thinly sliced
- 2 hard-boiled eggs, peeled and halved
- 1 cucumber, julienned
- 2 to 4 radishes, thinly sliced
- 2 green onions, thinly sliced
- 1 tablespoon of toasted sesame seeds
Instructions:
- Combine beef broth, soy sauce, rice vinegar, sugar, garlic, ginger, and sesame oil in a pot. Boil the mixture. Lower heat and cook for 15 minutes to combine flavors.
- Prepare toppings while soup cooks. Sear beef in hot frying pan. Pan-cook thin slices of meat until brown and cooked inside. Cool and chop into small pieces.
- Cook, drain, rinse noodles to remove starch. Soak rinsed noodles in ice water to chill.
- Drain noodles, add sesame oil, toss gently. Prevent sticking noodles.
- Assemble naengmyeon bowls with noodles and broth. Add beef, eggs, cucumber, radishes, and onions to top of the noodles.
- Sprinkle sesame seeds and add gochujang for extra flavor.
Tips:
- For a veggie version, use veggie broth & skip beef. Add shiitake mushrooms for extra flavor.
- Add ice cubes to the dish before serving.
- Personalize your naengmyeon by adding kimchi, pickled radish or sliced pear for sweetness.
