Korean Ginseng Chicken Soup (Samgyetang)

Ingredients:

 

For the soup:

 

  • 1 whole chicken (3-4 pounds)
  • 6-8 fresh ginseng roots
  • 10 garlic cloves
  • 10 jujubes (Korean dates)
  • 1 cup of glutinous rice

Instructions:

  3. Pour out water from wet sticky rice. Fill chicken 3/4 full with rice and hold in place with toothpicks or twine.
  4. Add chicken, garlic, jujubes and enough water to cover in pot. Then, heat until bubbling.
  5. Cover the soup and simmer on low for 1.5 to 2 hours to enhance flavor.
  6. Mix salt and sesame oil for soup dip while cooking.
  7. Ensure chicken is tender and fully cooked with easy bone separation.
  8. Take out the chicken from the pot and let it cool. (Debone and shred into bite-sized pieces.)
  9. Add chicken to pot and let soup simmer to heat thoroughly.
  10. Season soup with salt and serve hot in individual bowls. Top with green onions and sesame seeds.
  11. Serve the soup with salt and sesame oil for dipping the chicken.
