Korean Food (Gimbap)

Ingredients:

 

For the Rice:

 

  • 2 cups of short-grain white rice
  • 2 and 1/2 cups of water
  • 2 tablespoons of rice vinegar
  • 1 tablespoon of sugar
  • 1 teaspoon of salt

 

For the Gimbap Fillings:

 

  • 5-6 sheets of roasted seaweed (gim/nori)
  • 8 ounces bulgogi (marinated beef), thinly sliced
  • 3 eggs
  • 1 medium carrot, julienned
  • 1 small cucumber, julienned
  • 1 bunch spinach, blanched and squeezed
  • 1/2 cup of pickled radish, thinly sliced
  • 1 tablespoon of sesame oil
  • Salt and pepper to taste

 

 

Instructions:

 

  1. Rinse the rice in cold water until the water runs clear. Then, put in medium pot.
  2. Add water, soak rice for 30 mins. Then, cover the pot and cook on medium heat for 15-20 mins.
  3. Prepare the seasoning to mix the rice vinegar, sugar, and salt when cooking rice. Stir until dissolved.
  4. Mix cooked rice with spices in a big bowl, stirring slowly. Cool the rice to room temperature.
  5. Add vegetable oil to a pan and warm on medium heat. Mix eggs in a bowl. Add seasoning and transfer to pan. Mix eggs and cook into an omelet. Cut into small pieces on a board.
  6. Add seaweed to mat, place rice leaving space at top.
  7. Add bulgogi, egg, carrot, cucumber, spinach, and pickled radish to rice.
  8. Add sesame oil to stuffing for enhanced flavor.
  9. Roll seaweed and rice firmly with mat/towel, apply gentle pressure. Dampen top of seaweed to stick roll together.
  10. Make more Gimbap with remaining ingredients, repeat steps 6-9.
  11. Cut rolls into bite-sized pieces.
  12. You can eat the Gimbap with soy sauce or a spicy dip sauce to enjoy the taste!

 

 

Tips:

 

  • Use tofu or skip bulgogi if you avoid meat.
  • Try different fillings for more exciting Gimbap, like mushrooms, kimchi, or pickled veggies.
  • Add wasabi or gochujang to your dipping sauce for extra flavor.
